Gluten Free Blueberry Muffins

YIELD: according to package amount

The following basic muffin recipe is also located on the back on the Gluten Free Muffin Mix bag.

1 bag Gluten Free Muffin Mix

4 oz softened, unsalted butter

1 cup milk

1 large egg

1 ½ tsp. Vanilla extract or other flavor (optional)

Add up to two cups fruit, nuts or a combination

 

1. Preheat oven to 375˚F. Line a muffin pan with paper liners.

2. Using a hand held or stand mixer blend half of the mix with the butter until smooth. Add in the remaining ingredients, stir together, scrape and mix on medium speed for 4 minutes.

3. Fold in fruit or nuts.

4. Bake for 20-25 minutes.

Flavor Suggestions:

Blueberry Lemon-add zest from 2 lemons

Cranberry Orange-add sweetened dried cranberries and zest from 1-2 oranges

Maple pecan-add maple extract and toasted pecans.
