Gluten Free Coconut Macaroons (3 ways)

YIELD: 1 ½ dozen cookies

Delicious coconut macaroons can be made using either pie dough mix, coconut flour or cassava flour. See below for the recipe that matches the Moon Rabbit ingredient in your pantry.

10 oz. sweetened shredded coconut

½ cup granulated sugar

2 egg whites

Pinch salt

½ tsp. vanilla extract

2 Tbsp. coconut flour

OR

8 oz. Sweetened shredded Coconut

2 oz. Shredded Dessicated Coconut

½ cup Sugar

½ cup Whites

Pinch Salt.

¼ tsp. Vanilla

1 ½ tsp Cassava Flour

OR

8 oz. Sweetened shredded Coconut

2 oz. Shredded Dessicated Coconut

½ cup Sugar

½ cup Whites

¼ tsp. Vanilla.

2 Tbsp. pie dough mix

1. Mix all dry ingredients together. Add egg whites and vanilla extract and mix until combined well. This can easily be accomplished by hand.

2. Scoop or spoon the mixture onto parchment paper lined sheet pans and bake at 300 degrees for 20-25 minutes or until golden brown.
