Gluten Free Peanut Butter Blossom Cookies

Yield: 2 dozen

Prep Time: 10 minutes, Bake Time: 19 minutes

½ cup granulated sugar

½ cup light brown sugar

½ cup peanut butter

½ cup butter, soft

1 large egg

1 cup cassava flour

¾ tsp baking soda

½ tsp baking powder

¼ tsp salt

Chocolate candy pieces, unwrapped Granulated sugar, for rolling cookies in.

 

1. Preheat oven to 375˚.

2. Mix the sugar, brown sugar, peanut butter, butter and egg in a large bowl to combine. Add remaining ingredients. Cover and chill for about 2 hours or until firm.

3. Scoop cookie dough into walnut size pieces and roll each into a ball. Toss cookies in granulated sugar to coat then place on a cookie sheet lined with parchment paper.

4. Bake cookies for 10 minutes. Remove from oven and push one chocolate candy into the center of each cookie. Allow cookies to cool completely.

 

Variation – Use milk or dark chocolate candy kisses or put a ½ tsp of fruit jam into the center of each cookie.
