Gluten Free Peanut Butter Cookies

Yield: 2 dozen

The cookie of choice for the peanut butter lover.

Prep Time: 10 minutes, Bake Time: 19 minutes

½ cup granulated sugar

½ cup light brown sugar

½ cup peanut butter

½ cup butter, soft

1 large egg

1 cup cassava flour

¾ tsp baking soda

½ tsp baking powder

¼ tsp salt

Granulated sugar, for rolling cookies in.

 

1. Preheat oven to 375˚.

2. Mix the sugar, brown sugar, peanut butter, butter and egg in a large bowl to combine. Add remaining ingredients. Cover and chill for about 2 hours or until firm.

3. Scoop cookie dough into walnut size pieces and roll each into a ball. Toss cookies in granulated sugar to coat then place on a cookie sheet lined with parchment paper. Mark a crisscross pattern into each cookie by pressing into cookie with a fork.

4. Bake cookies for 10 minutes. Remove from oven and allow cookies to cool completely.
