Gluten Free Pumpkin Scones

YIELD: 16 scones

These scones are very easy to make with a mixer or by hand.

1 bag Biscuit and Scone mix

1/3 cup granulated sugar

1/3 cup pumpkin

1 cup heavy cream

7 Tbsp. cold butter

1 tsp. ground cinnamon

½ tsp. ground ginger

¼ tsp. ground allspice

¼ tsp. ground nutmeg

1 tsp. Star Kay White vanilla extract

 

1. In a mixing bowl with a paddle combine dry mix, spices, butter and sugar together until it resembles a coarse cornmeal.

2. Add in the cream, pumpkin and vanilla extract and mix until combined.

3. Scrape down the bowl and mix an additional 30 seconds.

4. Divide the dough in half, roll into 2-6”rounds. Cut each disc into 8 pieces and place on a parchment paper lined double sheet pan. Brush with cream and sprinkle with sugar.

Variation – Scones can be mixed by hand.
