Gluten Free Fennel & Chèvre Flatbread
Yield: 12 flatbread crackers
These easy to make flatbread crackers are great for appetizers, cheese plates, to accompany a salad, or enjoy on them on their own.
Prep Time: 8 minutes plus chilling time. Bake Time: 15-20 minutes @350 ˚F
1 cup Gluten Free pie dough mix
3 oz butter 1 oz. goat cheese
3 Tbsp. cold water
½ Tsp. crushed fennel seed
1. Blend the dry mix, butter and chèvre together until it resembles coarse cornmeal. Add in the water until the mix comes together. For easy handling, gently form the dough into a ball, place the dough between two layers of plastic wrap and flatten into a 6 to 7” circle. Refrigerate for 15 to 20 minutes.
2. After chilling, roll thin to a 10″ circle on a piece of parchment or baking mat (you may use rice flour for dusting the surface to prevent the dough from sticking.) Cut the disc into 12 triangles. Brush with water and sprinkle with selected toppings.
3. Transfer the prepared, pre-cut disc onto a sheet pan leaving it on the parchment or baking mat and bake at 350F for approximately 15-20 minutes or until it turns golden brown. *Oven times may vary according to your specific oven. Once cooled, break apart the disc, it will snap apart clean from the cuts you have made, and store in an air tight container until you’re ready to enjoy them!
Variation – Try adding in fresh herbs*, sesame, poppy seeds or your favorite seasoning blend for a special treat.
*If using fresh herbs place them in the dough as you make it, fresh herbs sprinkled on top of the dough before baking may burn.
